3、选择清洁,无腐败变质,无异味的。

4、挑选已剥皮的豌豆粒时,手握一把时咔嚓作响、声音清脆,此类豌豆粒较为新鲜。

5、随机选几个豌豆粒,轻轻掐豌豆粒,若都鲜嫩多汁,表明该批次豌豆粒较为新鲜,如果干瘪无水分,说明此批次豌豆粒不新鲜。

6、捏捏豌豆的硬度,老豌豆质地比新鲜豌豆更硬一些,用手捏碎豌豆,新鲜豌豆的两瓣豆肉不会明显分开,而老豌豆的两瓣豆肉会自然分开。
